Arriving at the shop in hefty eight kilogram wheels, Laiterie Charlevoix uses milk from the three remaining herds of Vache Canadienne to make this truly special Canadian cheese. This is breed of cows unique to Canada, with origins dating back to the year 1608 when the first settlers arrived with cows from France.
A typical Quebecoise-style semi-firm with a buttery and smooth texture, 1608 has a beautiful orange-hued washed rind. The taste is creamy and nutty, with a slight tang on the finish that will keep you coming back bite after bite.
Acting as the perfect crowd-pleaser on your cheese board, 1608 also makes for an excellent melting cheese for hardy dishes like mac and cheese and scalloped potatoes.
