La Sauvagine

It is estimated that in the fall, the Quebec sky plays host to over thirteen million ducks, geese and teals. They make up what we call the sauvagine. Inspired by the splendour of these birds, the artisan cheese makers at the Fromagerie Alexis de Portneuf created a washed-rind cheese with a deliciously rustic flavour.    
 
With a beautiful orange-yellow colouring, La Sauvagine ripens from the outside in. Mild flavours of cultured butter and hay dominate, becoming runnier and slightly pungent when perfectly ripe.
