Avonlea Clothbound Cheddar

This rustic cheddar from Cows Creamery in P.E.I. is produced through the historic craft of linen-wrapping and aging that has long disappeared from Canada. It is a rare practice that produced an exceptional cheddar with a distinct earthy aroma. The cloth, which is applied to the exterior of the Avonlea Cheddar wheels, allows the cheese to breathe, resulting in a rich, robust cheddar flavour that has an irresistible tangy bite at the end.

With no point on the island more than thirty kilometres or so from the sea, the salt air and the iron-rich red soil combine to make this cheddar an exceptional product.
