An artisan farm cheese from Les fromages du Verger, Brebichon has a whitish beige wrinkled rind and a cream-coloured creamy interior that is chalky in the centre. It boasts aromas of fresh milk along with lactic, slightly tart flavours and a hint of apple.
Introduced in 2008, the cheese is a play on the words “brebis” (ewe) and “reblochon,” the well-known French cheese. Brebichon is produced in the same type of mould as the famous Savoy cheese. In addition to being apple-washed, processed apple juice is added to the milk during production.
The first cheeses made by Les fromages du Verger were introduced in 2008, one year after Brigitte and Michel Guérin acquired an apple orchard on a mountain in St-Joseph-du-Lac.
Both former executives in the pharmaceutical industry, the Guérin couple decided to change their lifestyle completely. They wanted to become entrepreneurs and be independent. They had long shared the dream of owning their own herd, and the birth of their daughter felt like the perfect time to embark on the adventure
Seeing an opening in the market for ewe milk cheeses, they decided to acquire a ewe herd. Now all they needed was the land. Installing a herd and a cheese dairy in an orchard was not part of the original plan; the Guérins were looking for land close to Montreal. But then they found the orchard that would become their new universe: over 3,000 apple trees representing 14 different varieties. This is the happy coincidence that led to the development of fine cheeses matured with apples!
