Le Cendre de Grand Jardins

Produced by the famed artisan cheesemakers of Quebec's Laiterie Charlevoix, Le Cendré is named for the nearby Grand-Jardins park which was marked by forest fire nearly twenty years ago. The supple cream-coloured paste of Le Cendré is divided by a distinctive layer of vegetable ash and enveloped by a pillowy, orangish rind. Quality milk from local herds is aged forty-five days, giving this supple cheese pleasant notes of grassy meadows and hay with a subtle farmhouse tang.
